It’s time

Long the sleeping giants of the food service industry, institutional food providers are waking up to intense public scrutiny.

Public interest in creating local jobs through local purchasing has joined up with public interest in supporting food that hasn’t caused pollution from long-distance travel and unsustainable growing practices.

And it’s time that institutions start responding to this growing demand. It’s not as intimidating as it sounds, and in fact, a few institutional leaders are paving the way.

Leading the way

Municipalities such as Markham for example – have established local sustainable procurement policies, and are purchasing foods that are both Certified Local Sustainable or fair trade.

Leading universities – most notably the University of Toronto — are making a name for themselves by setting a brisk pace for phasing in Certified Local Sustainable foods.

Given the fact that local food is one of the few job-intensive areas of the economy that can’t be outsourced, there’s no likelihood that public demand for change in food procurement will go away.
